Candied Carrots

Candied Carrots...try this nice carrot salad recipe...a great one !

INGREDIENTS:
  • 6 large carrots, peeled
  • 12 small white onions, peeled 3 tablespoons butter
  • 1 tablespoon sugar1/3 cup light molasses
  • 1/4 teaspoon salt 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
INSTRUCTIONS:
Using separate medium saucepans, cook carrots and onions, covered, in boiling salted water
for 20 minutes, or just until crisp-tender; drain each well.Melt butter in large skillet; stir in sugar, molasses, salt, and spices. Heat, stirring constantly, to the boiling point. Add carrots and onions, stirring to coat well with syrup.
Simmer, stirring frequently, for about 10 minutes, or until nicely glazed. The carrot salad recipe candied and onions is ready to serves 6 persons. Great taste !

INGREDIENTS
  • 1 pound carrots, peeled and grated
  • 1/2 cup raisins
  • 1/3 cup mayonnaise, or to taste
  • 1 tablespoon granulated sugar, to taste
  • 1/2 teaspoon salt black pepper, to taste
INSTRUCTIONS
Put grated carrots in a large bowl; toss with remaining ingredients. Chill thoroughly before
serving.The Carrot Salad recipe serves 4 to 6 persons...nice ! Enjoy !

Middle Eastern Carrot Salad Recipe

MIDDLE EASTERN CARROT SALAD RECIPE

Ingredients:
  • 4-5 medium size carrots
  • 1-2 tsp mint-fresh or dried
  • 1 tsp parsley-fresh or dried
Dressing:
  • 3 tb olive oil
  • 3 tb Fresh lemon juice
  • 1/2 ts Ground coriander
  • 1/4 ts Salt
  • 1 tsp honey

INSTRUCTIONS

Shred carrots with a grater or food proccessor. Add mint and parsley.
For the dressing mix together all ingredients except the honey and mix vigorously.
Add honey and mix until it is well blended with dressing.
Pour dressing into salad and mix together.
Cool salad for 1 hour before serving.
Makes about 4 servings. The carrot salad recipe is ready ....great !

APPLE CARROT SALAD

APPLE CARROT SALAD... a great carrot salad recipe to try !

Ingredients:

  • 2-4 carrots
  • 1 apple

Optional Ingredients:

  • 1/4 cup raisins
  • 1/4 cup chopped nuts

Dressing:

  • 3-4 tbsp. vanilla yogurt
  • 1 tsp. lemon juice
  • 1 tsp. honey

INSTRUCTIONS
Peel and grate carrots into a bowl. Use enough to make about 2 cups.
For the apple grate it down to the core or slice it up with a knife to the core and cut it up into chunks or julienne style. Leave the skin on but prefer to peel the apple first.
For the dressing use plain yogurt and add a few drops of vanilla extract instead of
vanilla yogurt. Experiment with different flavoured yogurts as well. Fat-free, partly skimmed or regular yogurt will all work well with this recipe. For fat free yogurt use 4 tablespoons, less for regular.
The lemon juice can be substituted with any other fruit juice you may have. Orange and lime
juice are good alternatives.
If you don't have or want to use honey you can use a little sugar, artificial sweetener or
even pancake syrup. Just remember to use sweeteners sparingly.
Mix dressing together in a small bowl and add to salad. Mix well and cool salad for at least
an hour before serving. The carrot salad recipe is ready to serve....enjoy the salad !

CARROT AMBROSIA SALAD RECIPE

INGREDIENTS
  • 1 3/4 c. carrots, shredded
  • 1/2 c. pineapple tidbits
  • 1/4 c. raisins
  • 1/2 c. miniature marshmallows
  • 1/4 c. salad dressing
  • 1/4 c. sour cream
  • 1/2 c. whipped cream
INSTRUCTIONS
Mix carrots, pineapple, raisins, marshmallows. Fold together salad dressing, sour cream and whipped cream. Fold dressing mixture into fruit and vegetable mixture and chill. Shredded coconut can be added if desired.The carrot salad recipe is ready to serve...

PIQUANT CARROT SALAD






PIQUANT CARROT SALAD
RECIPE

INGREDIENTS
  • 1 1/2 lbs. carrots, cut into 1/4 inch slanting slices
  • 6 green scallions, sliced or med. chopped onion
  • 1 sm. green pepper, chopped
  • 1/4 c. white wine vinegar
  • 3 tbsp. sugar
  • 3 tbsp. salad oil
  • 1 tbsp. ketchup
  • 1/2 tsp. seasoned salt
  • 1/2 tsp. celery seed
  • 1/2 tsp. Worcestershire sauce
  • 1/2 tsp. mustard
INSTRUCTIONS
Cook carrots until tender, about 5 minutes. Drain. Cool quickly under cold running water. Drain.
Combine vinegar, sugar, oil, ketchup, salt, celery seed, Worcestershire and mustard and blend well. Pour over carrots, onions and pepper.
Cover and refrigerate salad for at least 4 hours or until next day, stirring several times. The carrot salad recipe makes 4-6 servings....nice salad !

INGREDIENTS
  • 2 lbs. carrots, peel & slice thin, cook & cool
  • 1 onion, chopped
  • 1 green pepper, diced
  • 1 c. sugar
  • 1/2 c. vinegar or 1/2 c. salad oil
  • 1 can tomato soup
  • 1 tsp. salt, pepper & dry mustard

INSTRUCTIONS
Just bring to boil, sugar, vinegar, salad oil, tomato soup, salt, pepper and dry mustard. Cool. Then pour over carrots and onion and green pepper. The carrot salad is ready to serve cold. Keeps well...enjoy !
